Carrot Salad

I’m not going to give specific quantities – just go for the amount that suits the number of people you are feeding.

You will need:

grated carrots – about half a carrot per person

thread coconut – about one cup per six people

chopped mint

currants – about half a cup per six people

Method:

Soak the currants in a mixture of lemon juice, white vinegar, salt and sugar – I try to leave them to soak for a couple of hours before I make the salad.

Mix everything together – simple!
